Description: Thierry Villard, a native of Paris, traveled the world and settled in Chile in the mid 1980s. Villard Fine Wines was established in 1989 in Casablanca, making them one of the pioneers in the valley. Today, they are recognized as a leading producer in the region. The vineyard sits on foothills of a coastal mountain range just 35 kms from the Pacific Ocean. The Humboldt current running through the cold waters of the Pacific has a big impact in the microclimate, with cool sea breezes giving the region more moderate temperatures -- an ideal climate for grapes. This cool-climate Syrah expresses lean, vegetal character, as opposed to the jammy, fruit-driven shiraz found in hot climates like Australia.
Food Pairing: Salmon and other fatty fish, roast poultry, pasta dishes, etc.
