Description: Costador, run by Joan Franquet, works only using organic and biodynamic practices on a singular mountain where the vines are 60 to 110 years old. Joan Franquet strives to preserve the authentic flavor and taste of the varietals and so only uses wild and autochthonous yeasts for fermentation. Fermentation is done in clay amphora and spends five months on its lees, then used French oak for 5-7 months.
At first sight, a burst of orange with bronze reflections. Aromas of bread yeast, hops, and dried honey. The palate reveals a dry, tannic texture with hints of mineral brine and dried apricots. Food Pairing: roasted turkey with stuffing, celery root soup, collard greens, pork belly, brussels sprouts, salad greens etc.
