Grape: Carmenere. Region: Chile> Central Valley> Maule. Notes: Sustainable Farming.
Description: Fitz Roy is a collaboration between Elixir and France's famed Lurton brothers, with the intention of crafting terroir driven, sustainably farmed Chilean varietal wine with unbelievable pricing. Carmenere is the darkest and most purple of all red grapes and was once a major blending component in Bordeaux, where locals called it "Grande Vidure.”
The Colchagua Valley's climate allows this slow growing, heat loving varietal to fully ripen, expressing the dense, rich character that has made it Chile's signature grape. Dark garnet in color, this Carmenere has aromas of black plum, rich soil, toasted vanilla, and licorice. Fruity with dried raspberry, tar, roasted cherry, white pepper, and a moderate amount of oak. The tannins are soft and silky with a warming medium-length finish.
Food Pairing: Corned beef, roasted eggplant, tomato-based dishes, etc.
