Rhum/Rum Defined: Most rum produced is made from molasses, the by-product of sugar cane. A notable exception is the French-speaking islands, where sugarcane juice is the preferred base ingredient. Some producers work in batches using pot stills to add complexity. However, most rum production is done using column-still for larger quantities.
Aging and blending in many countries require rum to be aged for at least one year. This aging is commonly performed in used American bourbon barrels.
