Description: Domaine Hegarty-Chamans is located on the south facing foothills on the Montagne Noire in the Minervois region. Sir John Hegarty and winemaker Jessica Servet are all about non-interventionist farming. The estate has been certified by Demeter and EcoCert since 2010. The wine displays dark purple ink all the way to the rim. The nose immediately exhibits flint strike, mineral salts, mulberry, and pomegranate in the background. On the palate, notes of creme de cassis, barnyard, and eucalyptus upfront with lightly gripping tannins. This is a medium-bodied wine with good acidity, creating a lively sensation on the mid-palate, with cumin, star anise, and cinnamon toward the finish.
Food Pairing: Hearty meat dishes, liver, wild boar, olives, Provencal dishes, rosemary, vegetables, pizza, etc.
