Description: The Cuilleron family is located in the town of Chavanay, it was founded several generations ago (1920). This wine is made 40 year old vines sourced from terraced vineyards perched on the slopes of Chavanay, which makes most mechanization difficult, if not impossible. Thus, much of the vineyard work continues to be done by hand. The soil is mostly granite with some sand and a very thin top soil. In the cave, the grapes are fermented using indigenous yeasts. The wine is aged in both medium and small sized oak barrels, with a small percentage of new oak. 16 months in barrel and then bottled with a light fining and no filtration.
Food pairing: Fillet mignon, lamb, game, oxtail, blue and hard cheese, venison, stewed meats, truffles, choice cuts of beef, etc.
