Description: Vipava Valley is on the border of Slovenia, where the continental climate of the Alps collides with the more moderate mild Mediterranean climate from the Adriatic sea. The vineyards are located on steep valleys where the temperature is cooler and the soil contains flysch and mineral-rich marl. Pasji rep was first mention as a vineyard site all the way back to land registries in 1476, and the Pasji rep vineyards are hailed as one of the best vineyard sites in Europe, documented in the famous book The Glory of the Duchy of Carniola (1689) by polymath, Johann Weikhard von Valvasor - considered to be one of the most important works in Slovenia. Popping with bright aromas of lemon oil and sea breeze, with a smooth palate with notes of sweet and savory pear tart, distinct salinity, and a gentle oily texture that keeps you coming back!
