Notes: It is vinified in stainless steel. 20% carbonic maceration. 30% goes into American oak for 2-3 months before release.
Tajinaste is run by the indefatigable Agustín García Farrais. He works alongside his parents, Cecila (“Chilla”) and Agustín Snr., who are both 70 years old going on 30. Having trained in Bordeaux, Agustín is a precise winemaker. He vinifies each parcel separately, which has allowed him to get to know the character of each vineyard so well that he can masterfully blend extremely consistent and beguiling wines year after year. The 2015 is excellent, wafting from the glass in a complex aromatic blend of sweet dark berries, woodsmoke, chicory, beautiful soil tones and a gentle botanical topnote redolent of balsam boughs. On the palate the wine is deep, full-bodied and tangy, with lovely soil signature, a fine core, gentle tannins, bright acids and lovely length and grip on the complex finish.
