Jean Rijckaert’s goal is to use the minimum amount of mechanical techniques, he prefers a return to manual work. The soils are plowed so the vines have to go deeper to search for nourishment. This is why the vines are more characteristic of the terroir. Jean looks for wines that customers can enjoy, more than getting the best scores. Savagnin, the famed white grape of this region, from single vineyard “Les Sarres” was harvested manually and aged in neutral oak barrels for 22 months. Refreshing acidity counter balances the nutty, complex flavors due to the long lees contact.
